MELBOURNE, Australia — Sarah Hudson, writing in Weekly Times Now, says Katy Holder, author of “Hungry Campers Cookbook,” puts an emphasis on fresh ingredients requiring minimal cooking equipment.
There are nine chapters, with some meals made at home before heading out, including marinated fish fillets, teriyaki pork and chocolate brownies, says Hudson.
Hudson says other chapters include one-pot dinners and salads, with offerings such as massaman lamb curry, barley risotto with pumpkin, and pasta salad with roasted vegetables.
“With a little forethought and preparation, eating under the stars can be as good, if not better, than any meal eaten at home,” Holder writes.
