WACO, Texas -- Each week, RV Daily Report will publish one recipe each week from the RV Centennial Cookbook authored by Evada Cooper.
Produced by Texas State Technical College Publishing, the book features a collection of recipes submitted by RVers themselves. The company is providing the recipes in hopes of encouraging RVers to submit more recipes to be included in a new edition expected to be published in 2012.
This week's recipe is for cabbage and bacon skillet. It was submitted by Paul Meicher, from Sioux Falls, S.D. He has been RVing for eight years and has a Class A motorhome.

Instructions:
On stove top or over campfire in a heavy skillet, fry the bacon to almost crisp; take bacon out of skillet. Set aside. Drain some of grease out of pan, but not all. Cut up cabbage and put in skillet; add onion, about 1 cup of water, and salt and pepper to taste. Put heavy lid on skillet and simmer on medium heat until cabbage is soft. Check at times; stir and add more water as needed, or add some of the bacon grease if needed. Break up the bacon and put back into skillet with cabbage. Simmer about 10 minutes with lid on and it’s ready to serve.
